Understanding Coffee Roast Levels

Light roasts are roasted for the shortest time, preserving the bean's natural characteristics and origin flavors. Coffees roasted light tend to have bright acidity, floral or fruity notes, and a lighter body. At Calena, our Honduran beans at light roast reveal notes of citrus and stone fruit, reflecting the high elevation of our farm above 1,400 meters. If you want to taste the terroir of the coffee plant itself, a light roast is your best window into the soul of the bean.

Medium roasts strike a balance between origin flavors and the caramelized sweetness that comes from longer roasting. The acidity mellows slightly, and the body becomes fuller. You get a more rounded cup with notes of chocolate, nuts, and mild sweetness. This is often the sweet spot for everyday drinking and is highly versatile across brew methods from pour-over to drip to French press. Many coffee lovers find that medium roast best highlights the complexity of a quality single-origin bean like ours.

Dark roasts go through the longest roasting time, pushing the beans until the natural sugars caramelize deeply and the oils migrate to the surface. The result is a bold, smoky, bittersweet cup with low acidity and a heavy body. The origin flavors largely give way to the roast flavors themselves - think dark chocolate, charred wood, and molasses. Dark roasts work especially well for espresso-based drinks like lattes and mochas, where the roast character holds up against milk and other ingredients.
